Harman’s Really-Aged Cheddar, vintage 2024:  Our cheese is a natural, premium grade, white cheddar made in upstate New York for us in May 2024.  It's been aging for 21 months.

This Cheddar is wrapped in heavy saran and then in Kraft paper. It is NOT vacuum-sealed but you have our unconditional 100% guarantee that with refrigeration this cheddar will keep for 4 weeks from the date of delivery.  We recommend always wrapping it up tight after each use with saran wrap. 

*Unfortunately we have sold out of our *2023 Cheddar! *In 2023, we were only able to purchase 17,000 pounds of Cheddar and normally we use 28,000 pounds of Cheddar each year.   The May 2024 has a lovely flavor and will continue to develop more flavor as it ages each month.  
 

Bill at Fox Country Smokehouse smokes several cheeses including our own Harman's Cheddar.  He uses hickory smoking and we have some delicious choices for you.
