        Harman’s Really-Aged Cheddar, vintage 2021:  Our cheese is a natural, premium grade, white cheddar made in upstate New York for us in May of 2021.  It's been aging for over 2 and a half years.

        During this Winter, our two-pound block is on sale.

        This Cheddar is wrapped in heavy saran and then in Kraft paper. It is NOT vacuum-sealed but you have our unconditional 100% guarantee that with refrigeration this cheddar will keep for 4 weeks from the date of delivery.  We recommend always wrapping it up tight after each use with saran wrap.  

        From mid-November to mid-January, our cheese is wrapped in seasonal paper, perfect for giving as gifts.

        Harman’s Really-Aged Cheddar is a natural, premium grade, white cheddar made in New York State for us and then aged to bring out its flavor.

        This New York State Cheddar was made on June 10, 2020 from whole, pasteurized milk gathered from cows grazing on the lush “first grass" of spring. Milk from this time of year has a rich flavor for cheese. Our Cheddar contains no chemical additives and no added coloring; this is a pure, natural cheddar.  

        We had 28,000 pounds of this cheddar cheese made for us and have been aging it slowly at uniform low temperatures.   The delicious, smooth, zesty flavor has inspired our customers to label our cheddar as the “World’s Greatest.”    

        We cut each cheddar block by hand with an old-fashioned wire slicer and hand-wrap it fresh for you.
